INTRODUCING THIS YEARS CHRISTMAS COFFEE 🔴
Costa Rica F1 Red Honey. Produced by Diego Robelo at the renowned Aquiares Estate farm.
I dug into my childhood memories again for this one! My overarching taste note is 'warm red juice' IYKYK 😂 (like cordial/diluting juice, with hot water. we had it every winter when we got the sniffles, and now my kids love it too!)
This year I wanted to select and 'simple yet effective' coffee. Nothing crazy, and no wild processes. The coffee is a Esperanza varitetal. Esperanza is an F1 hybrid variety generated by a cross between Sarchimor T-5296 and wild Ethiopia ET-25. This variety is unique to Aquiares and is well suited to the farm’s terroir. Aquiares is an amazing model for larger scale speciality coffee farming. Diego’s father grew the workforce and provided affordable homes on site, and now Diego has carried on the eveolution recently making the farm carbon neutral and regularly welcomes researchers to the farm to conduct agricultural and environmental studies.
This coffee has a medium sweetness, low acidity, and heaps of body and chew. In the cup I'm getting brown sugar and blackberry.
